- Onion (1)
- Mushroom (3)
- Zucchini (1)
- Capsicum (1/2)
- Tomato (1/2)
- Baby Spinach (handful)
- Cottage Cheese (80g)
- Extra Virgin Olive Oil (just a dash)
- Egg (2)
- Almond Milk (as needed)
Method

Preheat a large pan to a medium heat and the oven to 180°C.

Cut up all the veges (aside from the spinach) into small pieces.

Splash a small amount of oil into the pan, and once heated add the veges (aside from the spinach).

Sauté the veges until they are soft (approx. 10 mins).

In a mixing bowl, beat the eggs and cottage cheese together. If the mix seems more stiff than runny, add a small amount of almond milk and beat again.

Put the sautéed veges into a small oven dish, followed by the spinach (roughly torn into smaller pieces) and then finally the egg mix.

Cook in the oven for approx 25 mins or until firm.
