Veggie Frittata

Ingredients

  • Onion (1)
  • Mushroom (3)
  • Zucchini (1)
  • Capsicum (1/2)
  • Tomato (1/2)
  • Baby Spinach (handful)
  • Cottage Cheese (80g)
  • Extra Virgin Olive Oil (just a dash)
  • Egg (2)
  • Almond Milk (as needed)

Method

  1. Preheat a large pan to a medium heat and the oven to 180°C.

  2. Cut up all the veges (aside from the spinach) into small pieces.

  3. Splash a small amount of oil into the pan, and once heated add the veges (aside from the spinach).

  4. Sauté the veges until they are soft (approx. 10 mins).

  5. In a mixing bowl, beat the eggs and cottage cheese together. If the mix seems more stiff than runny, add a small amount of almond milk and beat again.

  6. Put the sautéed veges into a small oven dish, followed by the spinach (roughly torn into smaller pieces) and then finally the egg mix.

  7. Cook in the oven for approx 25 mins or until firm.

  8. Serve and enjoy!
