Taco Style Lettuce Wraps

Ingredients

  • Beef Mince (500g)
  • Cottage Cheese (3 Tbsp)
  • Onion (1)
  • Garlic (2 cloves)
  • Capsicum (1)
  • Tomato (2)
  • Baby Spinach (handful)
  • Mushroom (3)
  • Lettuce (1)
  • Ground Cumin (1 heaped Tbsp)
  • Pink Himalayan Salt (1 tsp)
  • Dried Oregano (1 tsp)
  • Chilli Powder (1 Tbsp)

Method

  1. Bring a large pan to a medium heat.

  2. Cut up onion and garlic and add to pan. Sauté until soft.

  3. Add the mince, stirring periodically until browned.

  4. Cut up the tomatoes, mushrooms, capsicum and spinach and add to the pan, leave to simmer for approx. 10 minutes.

  5. Combine the spice mix (ground cumin, salt, oregano and chilli powder) in a small mixing bowl.

  6. Add the spice mix 1 tsp at a time until the flavour is at your liking (I'm terrible wtih spicy food so I just use 1 tsp of the mix and put the rest away for use next time).

  7. If the mix seems a bit dry, add water 1 Tbsp at a time. Leave to simmer for 10 minutes.

  8. Rince the lettuce and put 2 spoonfulls of the mince mixture into each large lettuce leaf. Add a small dollop of cottage cheese on top of the mix and enjoy!
