Roasted Tofu and Cauliflower Curry


  • Tofu (150g)
  • Cauliflower (1)
  • Ground Nutmeg (1/4 tsp)
  • Lemon (1 - small)
  • Baby Spinach (handful)
  • Parsley (small handful)
  • Tamari (1 Tbsp)
  • Garlic (2 cloves)


  1. Preheat the oven to 180°C.

  2. Cut up the tofu and cauliflower.

  3. Put the cauliflower on a lightly oiled oven tray.

  4. Lay tin foil across another oven tray and put the tofu on it.

  5. Cut up one clove of garlic and sprinkle accross the tofu.

  6. Drizzle the tamari over the tofu.

  7. Roast the cauliflower and tofu in the oven for 15 minutes.

  8. Bring a pan to a medium heat.

  9. Finely cut up the other clove of garlic, parsely and spinach.

  10. Bring a pan to a medium heat with a drizzle of olive oil.

  11. Remove the cauliflower and tofu from the oven and add to the pan.

  12. Add the garlic, parsely, spinach and nutmeg to the pan.

  13. Squeeze the lemon juice over the pan to taste, along with extra tamari if desired.

  14. Stir the mix together until the cauliflower is nice and soft.

  15. Serve and enjoy!
