Popcorn Chicken


  • Chicken Breast (1)
  • Salt (2 Tbsp)
  • Water (2 cups)
  • Rice Cake (2)
  • Pink Himalayan Salt (1/2 tsp)
  • Pepper (1/2 tsp)
  • Garlic Powder (1/2 tsp)
  • Ground Paprika (1/2 tsp)


  1. Cut the chicken into small cubes.

  2. Leave the chicken cubes to soak in a container with the 2 cups of water and 2 Tbsp of salt for at least one hour, or up to 8 hours.

  3. Blitz all of the other ingredients together using a stick blender or food processor.

  4. Preheat the oven to 200°C.

  5. Pour the crumb mixture onto a plate and roll each of the pieces of chicken through it.

  6. Place the chicken on an oven tray and back in the oven for 20-30 minutes until crispy to your liking.

  7. Serve in a bed of spinach and enjoy!
