- Chicken Breast (1)
- Salt (2 Tbsp)
- Water (2 cups)
- Rice Cake (2)
- Pink Himalayan Salt (1/2 tsp)
- Pepper (1/2 tsp)
- Garlic Powder (1/2 tsp)
- Ground Paprika (1/2 tsp)
Cut the chicken into small cubes.
Leave the chicken cubes to soak in a container with the 2 cups of water and 2 Tbsp of salt for at least one hour, or up to 8 hours.
Blitz all of the other ingredients together using a stick blender or food processor.
Preheat the oven to 200°C.
Pour the crumb mixture onto a plate and roll each of the pieces of chicken through it.
Place the chicken on an oven tray and back in the oven for 20-30 minutes until crispy to your liking.
Serve in a bed of spinach and enjoy!
