- Extra Virgin Olive Oil (2 Tbsp)
- Dried Basil (2 tsp)
- Dried Oregano (2 tsp)
- Salt (1/2 tsp)
- Pepper (2 tsp)
Preheat oven to 180°C.
Cut the chicken in (2-3) smaller pieces and place in baking dish.
Rub the olive oil over the chicken.
Squeeze the lemon juice over the chicken.
In a small bowl combine the zest of the lemon, oregano, basil, salt and pepper.
Sprinkle the lemon pepper mix over the chicken.
Bake in the oven for 30 minutes. I like to leave the lemon in the baking dish to help the flavours infuse.
