Lemon and Garlic Broccolini


  • Ice (tray)
  • Broccolini (1 bunch)
  • Extra Virgin Olive Oil (1 tsp)
  • Lemon (1/2 lemon)
  • Garlic (2 cloves)
  • Pink Himalayan Salt (pinch)
  • Pepper (pinch)


  1. Bring a medium sized pot to a medium heat and fill with water and bring to a boil.

  2. Cook the broccolini in the boiling water until it is soft (about 5 mins).

  3. Prepare an ice bath by tipping an ice tray into a mixing bowl and adding a bit of room temperature water.

  4. Once the broccolini is soft, drain the water away and immediately add the broccolini to the ice bath.

  5. Zest the lemon and mince the garlic.

  6. Bring a large frypan to a medium heat and add the olive oil, lemon zest and garlic, stir.

  7. Add the broccolini to the pan and cook for 2 minutes.

  8. Squeeze the lemon juice over the broccolini and toss.

  9. Serve and season with a bit of pink salt and pepper. Enjoy!
