Kumara and Capsicum Vegetable Stacks

Ingredients

  • Kumara (3 - different colours)
  • Baby Spinach (handful)
  • Capsicum (2)
  • Sea Salt (pinch)

Method

  1. Preheat oven to 180°C.

  2. Rince and peel the kumara, then cut into 2-3cm thick slices.

  3. Place the kumara on an oven tray and lightly drizzle them with oil. Bake the kumara for 10-20 minutes (or until soft).

  4. Cut the capsicum into squares.

  5. Once the kumara is ready, arrange into stacks using the pattern of kumara -> capsicum -> spinach, using three slices of kumara, with kumara being the top layer.

  6. Bake the stacks in the oven for 20 minutes.

  7. Sprinkle each stack with a pinch of sea salt and serve!
