- Tomato (2 - large)
- Chicken Breast (1)
- Garlic (1 clove)
- Water (4 cups)
- Pink Himalayan Salt (pinch)
- Pepper (pinch)
- Dried Oregano (1/2 tsp)
- Dried Basil (1/2 tsp)
- Dried Thyme (1/2 tsp)
- Fresh Parsley (1/4 cup - chopped)
Boil and skin the tomatoes (see step three in Tomato Soup if you haven't done this before).
Cut the chicken breast into small pieces and blend using a stick blender or food processor to make mince.
Bring a pan to a medium heat.
Cut up the garlic clove and add to the pan.
Add the chicken to the pan and brown.
Add the tomato, pepper, salt, oregano, basil, thyme and parsely to the pan.
Simmer the mix for 10 minutes.
Use a peeler to shave the courgette lengthways (forming ribbons).
Serve the chicken mince on the courgette, and enjoy!
