Halloumi and Asparagus Salad

Ingredients

  • Halloumi (100g)
  • Asparagus (8 stalks)
  • Cherry Tomatoes (10)
  • Zucchini (2)
  • Baby Spinach (handful)
  • Garlic (2 cloves)
  • Lemon (1)
  • Extra Virgin Olive Oil (1/2 Tbsp)
  • Pink Himalayan Salt (pinch + more for salted water)
  • Pepper (pinch)
  • Ice (tray)

Method

  1. Bring a small pan with a half the olive oil to a medium heat.

  2. Use a paper towel to gently wipe any excess moisture off the holloumi.

  3. Pan fry the holloumi for approx. 3 minutes until it is browned on either side.

  4. Bring a small pot of salted water to a boil.

  5. Prepare an ice bath.

  6. Cut each stalk of asparagus into 3 even pieces.

  7. Put the asparagus in the boiling water for 2-3 minutes (until it is tender).

  8. As soon as the asparagus is ready remove it from the pot and put it in the ice bath.

  9. Use a peeler to shave the courgette lengthways (forming ribbons).

  10. Combine the courgette, asparagus, holloumi and spinach in a bowl.

  11. Crush the garlic and add to the bowl.

  12. Add the lemon zest and juice to the bowl.

  13. Toss the salad, adding olive oil, salt and pepper to taste.

  14. Serve and enjoy!
