Chicken Patties

Ingredients

  • Chicken Breast (1)
  • Ginger (5 cm)
  • Spinach (handful)

Method

  1. Rinse the ginger in warm water, then peel and grate it.

  2. Cut the spinach into small pieces.

  3. Cut the chicken into small pieces.

  4. Bring a frying pan to a medium heat.

  5. Blitz the ingredients together in a food processor and form into 4-5 patties.

  6. Cook the patties in the frying pan for 10-15 minutes on each side.

  7. Serve with your favourite accompaniment (I have one of these with a teaspoon of Bridget's Sticky Sauce on top every morning for breakfast).
