Banana Oat Muffins

Ingredients

  • Whole Wheat Flour (2 cups)
  • Rolled Oats (1/4 cup)
  • Baking Soda (1 tsp)
  • Ground Cinnamon (1/2 tsp)
  • Salt (1/2 tsp salt)
  • Banana (2-3 - medium size)
  • Egg (2)
  • Liquid Honey (1/2 cup)
  • Extra Virgin Olive Oil (1/3 cup)
  • Almond Milk (1/3 cup)
  • Vanilla Bean Extract (1 tsp)
  • Walnuts (1/2 cup - chopped into small pieces)

Method

  1. Preheat oven to 180°C.

  2. Combine all dry ingredients.

  3. Beat all wet ingredients until combined.

  4. Add the dry ingredients and combine, be careful not to overmix.

  5. Divide into 12 muffin cups.

  6. Cook for 15-20 minutes, until a toothpick or skewer inserted into them comes out clean.

  7. Serve and enjoy!
