Banana Cashew Nut Ice Cream


  • Cashews (3/4 cups)
  • Blueberries (2 cups)
  • Liquid Honey (2 Tbsp)
  • Mint Leaves (10)
  • Water (1/2 cup)
  • Cacao Powder (2 tsp - optional)


  1. Blitz the cashews with the water using a stick blender or food processor until it forms a paste.

  2. In a mixing bowl, combine the blueberries, honey, cut up banana, mint leaves and cashew paste (and cacao powder if using).

  3. Blitz it all together until smooth.

  4. Leave it all to set in the freezer for about 5-6 hours. (Once it has been in the freezer for longer than this is will set hard and will need time to defrost slightly before you can serve it).

  5. Serve and enjoy!
